No visit to Northern Thailand is complete without exploring the UNESCO-listed ancient ruins of Sukhothai, a former capital predating Ayutthaya. The impressive Historical Park contains the remnants of the 13th-14th century Kingdom's royal palace and dozens of exquisitely preserved Buddhist temples and towering chedis (stupas).

Must-Try Food in Northern Thailand

  • Khao Soi

This is one of the northern Thai staples, using egg noodles in a curry broth. It should contain fresh, coconut-based curry broth, egg noodles, chicken thighs, or beef, topped by crispy fried noodles in a nest. Serve with sliced shallots, chili oil, and lime on top for that refreshing flavor-all are bound to please the crowd. A Muslim variant is also done with beef or lamb.

  • Sai Oua

From Italy to Germany, and Thailand to America, every country has its favorite sausages, whose recipes vary in accordance with the taste and culture of that particular country. In Thailand, sai oua is one such sausage that contains lots of spice. This minced pork sausage literally translates from Thai as 'intestines' and the local dialect for 'to stuff'. It gets its seasoning with garlic, herbs, red curry paste, and chili.

  • Khao Lam

Khao Lam, which is a type of bamboo dessert, is made by putting some combination of glutinous rice, sugar, coconut cream and occasionally boiled black eyed beans into a tubular piece of bamboo. For fancier choices for the stuffing, taro or young coconut are sometimes added too. It is a popular dessert in the north as well as in the central plain of Isaan.

Specialty beverages that reflect local traditions are a key part of Northern Thai cuisine. One of my favorite drinks is Northern Thai hot tea, or 'Cha Muang Nuea,' made from green or oolong tea harvested in the cooler, hilly regions of Chiang Mai, Chiang Rai, and nearby areas ideal for tea cultivation.

More so, this region of Northern Thailand is also known for the famous Thai coffee (กาแฟไทย) especially the ones from the Doi Tung and Doi Chang coffee growing regions in Chiang Rai. These areas are known to grow the best Arabica coffee beans and local small restaurants offer them. While Northern Thai coffee can be made the old way or the new way, each way has its own thick and yummy taste because of the climates and agricultural practices of the region.
